This open-faced sandwich was sooooo good -- and sooooo simple to make! I titled it "Tuna Sandwich" but there's much more than tuna going on here. I first toasted a slice of hearty bread and then sliced fresh tomato onto the bread and sprinkled a bit of salt on the slices. Then a layer of fresh basil leaves, some buffalo mozzarella, a sprinkling of tuna packed in water (minus the water, of course) and then some finely chopped red onion. oh, and the real clincher is to drizzle e.v.o.o. (how foodnetwork is that?) and balsamic vinegar on top before enjoying.
